While watching the RAW EEG, I saw a cool pattern with my eye movements.
Looking left and right, the 2 front sensors spiked in opposite directions
Looking up and down, the sensors spiked the same direction (less pronounced).
I assume this is well known, but it was fun to discover independently.

What you're seeing is EMG (muscle movement) interference. The electric signals from muscle movement are much greater than the tiny EEG (brainwave) signals, so you see large spikes when you blink or look sharply up/down/left/right.
Also interesting to note is that the spike pattern will vary depending on which way you look, so you can do very basic eye tracking just from these spikes
