I could use my girlfriend's phone but I'm not seeing her until wednesday. Is there something else I can do right now?

Not unless you have another Muse to try ;-)
You could also test on an old Android device, doesn't have to be iPhone.
EMail me once you have a test device and I'll send you a code to install without paying again.

So the problem is with your iPhone then. You said it was working yesterday, do you recall changing any settings or is there anything you can think of that would affect Bluetooth connectivity? Did you drop it?

I'm trying to remember but the only thing I did was connecting my airpods. But I tried forgetting every other bluetooth device, and it still doesn't work. I can use it without any issue on the Muse app too. For some reason the communication between the mind monitor app and the muse is failling on my iPhone.

Try unpairing your AirPods completely and leaving them in the case while you try Mind Monitor. I wouldn't have thought they should do anything if you're not actively using them.. but I'm not sure what else to test!

It's still doesn't work =(
This is so frustrating.. it was fine yesterday. And it works for a couple of seconds as soon as I launch the app, like I showed you in the video. Then it stops reading, doesn't make any sense. Could it be any app setup? I'm gonna keep trying different sollutions. Please let me know if you have more ideas. Thank you!

There are no settings in Mind Monitor that can affect connectivity, on the display of the data. You need to allow Bluetooth/Location permissions to connect to the Muse, but that's it, and you must have done that for it to connect.
I don't think it should have any effect, but try uninstalling both the Muse Calm app and Mind Monitor, then reboot and just install Mind Monitor to test.
